Specific performances of xanthan gum?
Xanthan gum is a white or light beige powder, it is the superior biological glue which possess the performences of thickening, suspending, emulsifying and stabilizing . Xanthan gum is tasteless, non-toxic, food safe, soluble in water, and was poly-anion in aqueous solution, with unique physical and chemical properties. Specific performance:
1.Viscosity: low-concentration solution having high viscosity properties (viscosity of 1% aqueous solution of gelatin is equivalent to 100 times), is a highly efficient thickener.
2.Shear (pseudoplastic): xanthan gum solution having a low shear static or high viscosity at high shear viscosity performance decline, but the molecular structure of the same. When the shear viscosity disappear back to normal.
3.Temperature: in a wide temperature range (-18--120 ℃), its performance is essentially unchanged.
4.Salt: at higher salt concentrations, even in a saturated salt solution which remains without the risk of precipitation and flocculation of the solubility, the viscosity is almost unaffected.
5.Acid: its solution viscosity in the range of PH value 1-12 essentially unchanged.
6.Also soluble and synergistic nature: with acid, alkali, salt, preservatives, natural or synthetic thickener good and insoluble in the same solution system. And guar gum, locust bean gum and other polysaccharide gums can produce synergy, the viscosity doubled.
7.Anti-oxidation, hydrolysis: xanthan gum stable double helix structure so that it has strong antioxidant and anti-enzymatic capacity.
8.Suspension: on the insoluble solids and oil droplets having a good suspension effect.
